Flavorful Southern black-eyed peas with cumin, red pepper, and smoked ham hocks.
Ingredients:
  • 1 pound dried black-eyed peas
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 5 cloves garlic, minced
  • 1 pound smoked ham hocks
  • 6 cups water
  • 1 tablespoon seasoned salt
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon freshly ground black pepper
  • 0.25 teaspoon crushed red pepper
  • 3 bay leaves
Instructions:
  • Allow the black-eyed peas to marinate in a bowl of water for a minimum of 2 hours or overnight.
  • In a large, heavy saucepan over medium heat, sauté onions and garlic in oil until onions are translucent, approximately 5 minutes.
  • Place the savory ham hocks into the pot with water and bring to a vigorous boil. Then, cover the pot, lower the heat to a gentle simmer, and let it cook for one hour.
  • After draining the peas, introduce them into the pan along with seasoned salt, onion powder, cumin, black pepper, red pepper, and bay leaves. Let it come to a boil, cover, reduce the heat to a simmer, and cook for 1 hour.
  • Cook uncovered until peas are tender, approximately 30 more minutes. Discard bay leaves and ham hocks before serving.
