Southwest Grilled Pork Chops and Corn

Grilled Southwestern pork chops and corn ready in just 30 minutes - the perfect dinner for two!
Ingredients:
  • 2 bone-in pork rib chops, 1/2 inch thick (3/4 lb)
  • 3 teaspoons southwestern seasoning mix
  • 2 tablespoons chopped fresh cilantro
  • 2 teaspoons butter or margarine, melted
  • 1 teaspoon lime juice
  • 2 ears frozen corn-on-the-cob
Instructions:
  • Preheat grill for indirect cooking as per manufacturer's instructions. Season pork chops with 2 teaspoons of the seasoning mix and allow to sit at room temperature for up to 5 minutes.
  • In a small bowl, combine cilantro, melted butter, lime juice, and 1 teaspoon of seasoning mix. Coat corn with 1 tablespoon of the cilantro mixture, saving the rest. Wrap each ear of corn in heavy-duty foil, seal edges tightly, and leave space for heat expansion.
  • Place the pork on the cooler side of a two-burner gas grill or over a drip pan on a charcoal grill. If using a one-burner gas grill, cook over low heat. Put the corn directly over medium heat and cover the grill. Cook for 10 minutes. Flip the pork and corn and continue cooking for 7 to 8 minutes or until the corn is hot, the pork is cooked through, and a meat thermometer inserted into the center of the pork reads 160°F. Serve the remaining melted butter mixture with the corn and pork.
