Southwest Pork Salad

Vibrant salad with tender pork tenderloin, bursting with flavors.
Ingredients:
  • 1/2 cup fat-free sour cream or plain yogurt
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons canola or vegetable oil
  • 1 pork tenderloin (3/4 lb)
  • 1/4 teaspoon pepper
  • 8 cups bite-size pieces mixed salad greens or 1 package (4 oz) mixed salad greens
  • 1 medium yellow bell pepper, sliced
  • 1 package (8 oz) fresh whole mushrooms, sliced (3 cups)
  • 1 can (15 to 16 oz) black-eyed peas, rinsed, drained
Instructions:
  • Preheat the oven to 350°F. Combine all dressing ingredients in a small bowl, ensuring they are well blended. Chill in the refrigerator until ready to serve.
  • Place the pork on a rack in a shallow roasting pan. Season with salt and pepper, then insert a meat thermometer into the thickest part of the pork.
  • Bake without covering for 30 to 40 minutes, or until a thermometer registers 160°F (for medium doneness) and the pork has a hint of pink in the center. Allow the pork to cool, then slice it.
  • On a large serving plate, artfully arrange the salad greens, bell pepper, mushrooms, and peas. Generously top with flavorful pork and serve with your favorite dressing.
