Quick and easy low carb breakfast with protein and fiber. Let tortillas come to room temp while prepping filling.
Ingredients:
  • 2 low carb whole wheat tortillas
  • 4 eggs
  • 2 tablespoons cream
  • 1 pinch salt and white pepper
  • 0.25 teaspoon cumin powder
  • 0.5 tablespoon butter
  • 1.5 tablespoons salsa, chunky style
  • 2 ounces Cheddar cheese, shredded
Instructions:
  • Combine the eggs with cream, salsa, cumin, and a pinch of salt and pepper in a mixing bowl, and beat until well mixed.
  • Melt the butter in a non stick skillet over medium-high heat, scramble the eggs, then add the cheese and fold in until it starts to melt, keeping them slightly runny.
  • Place tortillas on a flat surface. Divide eggs evenly between them, laying them on the bottom third of each tortilla. Fold the bottom third over the eggs, then fold in the sides and roll up. Serve.
