Create Southwestern breakfast sliders by scrambling ham, eggs, and veggies for a delicious grab-and-go meal.
Ingredients:
  • 1 teaspoon olive oil
  • 4 large eggs, beaten
  • 0.25 cup minced cooked ham
  • 1 tablespoon minced onion
  • 1 tablespoon minced bell pepper
  • salt and freshly ground black pepper to taste
  • 6 slider buns, toasted
  • 3 slices Cheddar cheese (such as Sargento®)
  • 6 tablespoons salsa
  • 6 tablespoons pickled jalapeno peppers
Instructions:
  • Warm up the olive oil in a medium skillet over low heat.
  • In a bowl, mix eggs, ham, onion, bell pepper, salt, and pepper. Pour the mixture into a hot skillet and cook until scrambled, about 1 to 2 minutes. Be careful not to overcook to avoid rubbery eggs.
  • Divide the egg mixture evenly among the 6 bottom halves of the slider buns, top each with a slice of Cheddar cheese, salsa, and jalapeños. Place the top halves of the buns on top and serve while warm.
