Spicy chorizo and green chile breakfast sliders: perfect for busy mornings or entertaining guests.
Ingredients:
  • 1 package (12 oz) Kings Hawaiian™ original rolls (12 rolls)
  • 6 eggs
  • 1/4 cup milk
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 lb. chorizo sausage
  • 5 slices pepper Jack cheese
  • 1/4 cup melted butter
  • 1 teaspoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
Instructions:
  • Preheat oven to 350°F.
  • Place the bottom halves of the Hawaiian rolls in a 13x9-inch (3-quart) baking dish without separating them.
  • Prepare a skillet by spraying with cooking spray. In a medium bowl, whisk eggs and milk until well combined. Cook the egg mixture in the skillet over medium heat until almost set, then add green chiles and mix in. Set aside.
  • In a separate 8-inch skillet, sauté the chorizo over medium-high heat, stirring frequently, until fully cooked.
  • Place the fluffy scrambled eggs onto the soft Hawaiian rolls, then layer on the savory cooked chorizo. Sprinkle the cheese evenly over the sandwiches and finally, crown them with the top halves of the rolls.
  • Combine melted butter and taco seasoning mix in a small bowl. Drizzle over sandwiches, then cover tightly with foil. Bake for 20 minutes.
