Make a mouthwatering southwestern skillet using Ultimate Chicken Helper® for a simple and tasty family meal.
Ingredients:
  • 1 1/2 cups hot water
  • 1 1/4 cups milk
  • 1 box Ultimate Chicken Helper™ Cheddar broccoli
  • 1 cup frozen corn
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 2 cups cubed cooked chicken
  • 1 large plum (Roma) tomato, seeded, chopped (1/2 cup)
  • 1/4 cup chopped fresh cilantro
  • 1 small lime, cut into 6 wedges
Instructions:
  • In a large skillet, combine hot water, milk, seasoning mix, and uncooked pasta from the Ultimate Chicken Helper box. Bring to a boil over medium-high heat, stirring occasionally.
  • Lower the heat and cover the pot. Let it simmer for 6 minutes, stirring occasionally.
  • Add in frozen corn, black beans, and chicken, then bring the mixture back to a boil. Lower the heat, cover and simmer for 5 to 7 minutes until the pasta and veggies are tender. Take it off the heat and stir in the creamy Cheddar cheese sauce from the Ultimate Chicken Helper box until fully combined. Add the tomato and 3 tablespoons of cilantro, stir until hot. Top with the rest of the cilantro and serve with lime wedges.
