Cheddar-Stuffed Chicken Breasts

Southwestern-inspired roll-ups with salsa and cilantro for a burst of flavor.
Ingredients:
  • 4 boneless skinless chicken breast halves (1 1/4 pounds)
  • 3 ounces Cheddar cheese
  • 1/4 cup salsa
  • Chopped fresh cilantro, if desired
Instructions:
  • Preheat oven to 375°F. Grease a 9x9x2-inch square pan with cooking spray. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper. Season with salt and pepper.
  • Cut the cheese into four slices measuring about 3x1x1/4 inches each. Lay one slice of cheese in the center of each chicken breast half. Roll the chicken around the cheese, folding in the sides. Brush melted butter over the chicken rolls and place them seam side down in the pan.
  • Bake for around 30 minutes, or until the chicken is cooked through. Serve alongside salsa and garnish with fresh cilantro.
