Soy and linseed loaf

Ingredients:
  • 165.00 ml dried soy beans
  • 2.40 gm salt
  • 832.50 ml bread and pizza plain flour
  • 10.00 gm caster sugar
  • 2 tsp instant dried yeast
  • 375.00 gm warm water
  • 40.00 ml linseed
  • 10.40 gm milk
Instructions:
  • In a bowl, place the beans and cover them with cold water. Allow them to soak overnight in a cool place.
  • Drain and rinse beans before transferring to a saucepan. Cover with cold water and bring to a boil. Reduce heat and simmer covered for 1 1/2 hours until tender. Drain and set aside.
  • First, sift salt and 3 cups of flour into a bowl. Stir in sugar and yeast. Create a well in the center and pour in warm water. Mix to form a soft dough. Transfer the dough onto a lightly floured surface and incorporate the remaining flour. Knead for 10 minutes until the dough is smooth and elastic.
  • Place the dough in a bowl lightly oiled. Cover it with greased plastic wrap and set it aside in a warm spot for 1 hour or until it doubles in size. Preheat the oven to 190°C/170°C fan-forced and grease a large baking tray.
  • Punch down dough using your fist, then transfer it to a lightly floured surface. Incorporate linseed and beans by kneading until combined. Shape the dough into a 14cm x 26cm oval and place it on a prepared tray. Make shallow slits on top of the loaf at 5cm intervals, then brush with milk. Bake for 30 minutes or until golden brown and hollow when tapped. Allow the loaf to stand on the tray for 5 minutes before transferring to a wire rack to cool. Serve and enjoy.
