Savor juicy, fire-grilled soy skirt steak served over fragrant rice.
Ingredients:
  • 1.5 cups sweet soy sauce (Indonesian kecap manis)
  • 1 cup sake
  • 1 cup pineapple juice
  • 1 cup mirin
  • 0.5 cup reduced-sodium soy sauce
  • 0.25 bunch fresh cilantro, chopped
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped scallions (green onions)
  • 1 tablespoon chile paste
  • 1 (1 pound) skirt steak
Instructions:
  • Combine sweet soy sauce, sake, pineapple juice, mirin, reduced-sodium soy sauce, cilantro, sugar, ginger, garlic, scallions, and chile paste in a large glass or ceramic bowl. Mix well. Add skirt steak and toss to coat. Cover with plastic wrap and refrigerate for 3 hours to marinate.
  • Preheat your outdoor grill to medium-high heat and brush the grate lightly with oil.
  • After marinating, shake off excess marinade before transferring it to a saucepan. Bring it to a boil and cook until sauce is reduced by half, around 10 minutes. Strain the sauce into a bowl.
  • Grill steak until juicy and slightly pink inside, about 4 to 6 minutes per side or until internal temperature reaches 140°F (60°C) when checked with a thermometer. Rest on a plate for 5 minutes, then serve with sauce.
