Spicy marinated pork piled on whole wheat buns for a tasty sandwich.
Ingredients:
  • 4.5 teaspoons low-sodium soy sauce
  • 4.5 teaspoons brown sugar
  • 2 teaspoons minced fresh garlic
  • 2 teaspoons sambal oelek
  • 1 teaspoon dark sesame oil
  • 1 teaspoon grated fresh ginger
  • 12 ounces pork tenderloin, trimmed and thinly sliced
  • 2 tablespoons rice vinegar
  • 2 teaspoons canola oil, divided
  • 0.25 teaspoon white sugar
  • 1 cup shaved carrot strips
  • 0.25 cup diagonally sliced green onions
  • 0.25 cup chopped fresh cilantro
  • 4 whole wheat hamburger buns, split
Instructions:
  • Combine soy sauce, brown sugar, garlic, sambal oelek, sesame oil, and ginger in a large bowl, whisk until well mixed. Add pork and toss until fully coated. Allow to marinate at room temperature for about 15 minutes.
  • Combine rice vinegar, a touch of oil, and a hint of sugar in a bowl. Mix in carrot strips, green onions, and fresh cilantro, ensuring everything is evenly coated.
  • Preheat the broiler with the oven rack positioned about 6 inches away from the heat source. Arrange the buns, cut sides up, on a baking sheet.
  • In a large skillet over medium-high heat, warm up the remaining 1 teaspoon of oil. Add the pork and cook, turning occasionally, until it's no longer pink in the center, which should take about 3 to 5 minutes.
  • Toast buns in the oven until lightly crisp, for 1 to 2 minutes. Spread bottom halves of buns with pork and carrot mixture, then cover with top halves of buns.
