Quick and delicious micro-dumplings pair perfectly with browned butter or braised meat.
Ingredients:
  • 0.5 cup all-purpose flour, plus more as needed
  • 1 large egg
  • 0.5 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 1 tablespoon creme fraiche, sour cream, or plain yogurt
  • 3 tablespoons milk, or as needed
Instructions:
  • Combine flour, egg, salt, cayenne, cream fraiche, and milk in a mixing bowl. Whisk until batter drips slowly off the whisk. Adjust thickness as needed with more flour for thin batter or more milk for thick batter. Test by using a cheese grater - batter should not drip through smoothly.
  • Simmer salted water in a pot over medium-high heat. With a spatula, push a spoonful of batter through the smooth side of the grater into the simmering water.
  • Once dumplings float to the surface, cook for a few more minutes. Using a slotted spoon, gently remove the dumplings and continue with the remaining batter in batches.
