Spaghetti and Meatball Stew

Try this savory stew with turkey meatballs, pasta, and mushrooms using Progresso® bread crumbs for a satisfying dinner.
Ingredients:
  • 2 tablespoons fat-free (skim) milk
  • 1 egg white
  • 1/2 lb lean (at least 90%) ground turkey or extra-lean (at least 90%) ground beef
  • 1/4 cup Progresso™ plain bread crumbs
  • 1/4 teaspoon poultry seasoning
  • 1/8 teaspoon pepper
  • 2 cups water
  • 2 cups fat-free tomato pasta sauce
  • 1/2 cup chopped green bell pepper
  • 1 jar (2.5 oz) sliced mushrooms, drained
  • 1 2/3 cups uncooked radiatore (nuggets) pasta (5 oz)
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat oven to 450°F. Combine milk and egg white in a medium bowl. Add turkey, bread crumbs, poultry seasoning, and pepper. Form mixture into 1-inch balls and place on an ungreased 15x10x1-inch pan. Bake for around 10 minutes until golden brown and fully cooked.
  • In a 4-quart saucepan, bring water, pasta sauce, bell pepper, and mushrooms to a boil. Add pasta and simmer for about 15 minutes until pasta reaches desired doneness, stirring occasionally. Add meatballs and heat through. Serve topped with Parmesan cheese.
