Spicy beef and cheese pie with vermicelli crust - ideal for dinner.
Ingredients:
  • 7 oz uncooked vermicelli or spaghetti
  • 1 egg
  • 1/3 cup grated Parmesan cheese
  • 1 lb lean (at least 80%) ground beef
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1 jar (14 oz) tomato pasta sauce
  • 1/4 cup light cream cheese with roasted garlic (from 8-oz container)
  • 1 cup shredded mozzarella cheese (4 oz)
Instructions:
  • Prepare and cook the vermicelli according to the package instructions, then drain.
  • Preheat the oven to 350°F and generously coat a 9 1/2-inch glass deep-dish pie plate with cooking spray.
  • In a large bowl, whisk together the egg and Parmesan cheese. Gently mix in the cooked vermicelli until coated. Press the mixture evenly into a pie pan, creating a crust by pushing it up the sides.
  • In a large skillet, sauté ground beef, bell pepper, and onion over medium-high heat until beef is cooked through; then drain excess fat. Mix in pasta sauce and evenly spread over the vermicelli-lined pie pan.
  • Combine topping ingredients in a small bowl and spoon rounded teaspoons of the mixture over the filling.
  • Bake for 25 to 30 minutes, or until the pie is heated through and the crust is a light golden brown. Allow pie to rest for 10 minutes before slicing into wedges for serving.
