Kid-friendly spaghetti squash with chicken, peppers, and tomatoes - a healthier pasta swap!
Ingredients:
  • 2 (4 pound) spaghetti squash
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh basil
  • 1 tablespoon minced fresh oregano
  • 15 medium cherry tomatoes, halved
  • 0.5 large green bell pepper, chopped
  • 0.5 large red bell pepper, chopped
  • 0.5 large orange bell pepper, diced
  • 0.5 large yellow bell pepper, chopped
  • 0.5 cup minced red onion
  • 0.5 pound ground chicken
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, finely minced
  • 0.5 cup shredded Parmesan cheese
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C). Use a sharp knife to pierce the squash all over for ventilation and place it on a rimmed baking sheet.
  • Roast in the oven until easily pierced with a knife, approximately 45 minutes.
  • As the squash bakes, mix parsley, basil, and oregano in a small bowl. Place cherry tomatoes, bell peppers, and onion in a separate bowl. Set aside both bowls.
  • Once the squash has 10 minutes left to cook, heat a large skillet over medium-high heat. Brown and crumble the chicken in the hot skillet for 5 to 7 minutes. Drain and set aside.
  • Take the roasted squash out of the oven and allow it to cool for a bit. Then, halve the squash and scoop out the seeds.
  • Heat olive oil and garlic in the skillet until fragrant, about 1 minute. Stir in fresh herbs and saute for another minute. Add the vegetable mixture and cook until slightly softened, around 3 minutes. Lastly, add the ground chicken.
  • Using a fork, shred half of the spaghetti squash lengthwise into the skillet. Mix well and sauté for approximately 2 minutes. Repeat the shredding process with the remaining spaghetti squash.
  • Finish with a generous sprinkle of fragrant Parmesan cheese, a pinch of salt, and a crack of fresh black pepper before serving.
