Spaghetti with bacon and Brussels sprouts

Transform dull Brussels sprouts into a vibrant dish by thinly slicing and quickly cooking them to preserve their flavor, color, and nutrients.
Ingredients:
  • 400g spaghetti
  • 300g Brussels sprouts, trimmed and finely sliced
  • 4 rashers lean bacon, sliced into thin strips
  • 40.00 ml red wine vinegar
  • 18.20 gm olive oil
  • Shaved parmesan, to serve
Instructions:
  • Prepare the pasta in a large pot of salted boiling water following the package instructions until it reaches the ideal firmness.
  • Heat a large non-stick frying pan over medium-high heat. Sauté oil, bacon, and onion until golden and bacon is crisp. Add Brussels sprouts, cook for 2 minutes, then stir in vinegar, salt, and pepper, and cook for an additional minute.
  • Drain the pasta and toss it with the Brussels sprouts mixture. Serve immediately, topped with shaved Parmesan.
