Flavorful pasta dish with a kick.
Ingredients:
  • 400g spaghetti
  • Shaved Parmesan, to serve
  • 500.00 ml loosely packed fresh continental parsley leaves
  • 95g (3/4 cup) walnut pieces
  • 2 garlic cloves
  • 125mls (1/2 cup) extra virgin olive oil
Instructions:
  • Prepare the pasta in a generous amount of boiling salted water according to the instructions on the package until it reaches the perfect al dente texture.
  • For the parsley & walnut sauce, combine parsley, walnuts, and garlic in a food processor. While running, slowly drizzle in olive oil until smooth. Season with salt and pepper.
  • After draining the spaghetti, mix it back into the sauce in the saucepan. Heat over medium heat, tossing until the spaghetti is thoroughly coated and heated.
  • Serve the dish in individual bowls with a generous sprinkling of shaved Parmesan on top.
