Spam Fried Rice

Create a delicious Spam stir-fry using pantry staples like veggies, eggs, and leftover rice for a quick and satisfying meal.
Ingredients:
  • 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
  • 1 tablespoon sesame oil
  • 1 onion, diced
  • 4 cups leftover cooked rice
  • 1 cup frozen peas and carrots
  • 4 large eggs, beaten
  • 2 tablespoons soy sauce
  • 0.5 tablespoon Sriracha
  • 4 large eggs
  • salt and ground black pepper to taste
  • 1 tablespoon shredded nori, or to taste
  • 1 tablespoon sliced scallions, or to taste
  • 1 teaspoon sesame seeds, or to taste
  • 1 teaspoon black sesame seeds, or to taste
Instructions:
  • Heat a large skillet over medium-high heat and fry the Spam until lightly browned, about 5 to 7 minutes. Transfer to a plate.
  • In the same pan, heat sesame oil until shimmering for about 1 minute. Sauté onion until slightly softened for about 5 minutes. Lower the heat, add rice and frozen vegetables, and fry until heated through for about 5 minutes. Push the rice mixture to the sides of the pan, pour beaten eggs in the center, and scramble until curds form for 3 to 4 minutes.
  • Combine half of the Spam with the rice mixture in the pan, then mix in the eggs. Stir in soy sauce and Sriracha, then remove from heat.
  • Gently crack the remaining eggs into a skillet on medium heat. Allow the outer edges to turn opaque, approximately 1 minute. Cover the skillet, lower the heat to low, and continue cooking until the egg whites are fully cooked, around 4 minutes. Season with salt and pepper to taste.
  • Top the fried rice with the fried eggs, add the reserved Spam, and garnish with nori, scallions, and sesame seeds.
