Delicious Spanish lamb burgers perfect for the family.
Ingredients:
  • 81.68 gm aioli
  • 1 slice bread
  • 64.38 gm milk
  • 500g Lamb Mince
  • 40.00 ml chopped flat-leaf parsley
  • 5.00 gm smoked paprika
  • 36.40 gm olive oil
  • 1 red capsicum, cut into strips
  • 1 red onion, cut into wedges
  • 1 chorizo, thickly sliced on the diagonal
  • 4 Stone Baked Ciabatta Rolls, split, toasted
  • 120g mixed leaves
  • Fries, to serve (optional)
Instructions:
  • 1. Place sliced bread on a small plate and generously pour milk over. Allow it to soak for 2 minutes, then gently squeeze out any excess liquid. Tear the bread into small pieces and transfer to a large bowl. Add mince, parsley, and paprika. Season with your choice of seasoning. Mix well using your hands. Divide the mixture into 4 equal parts and shape each into a patty about 11cm wide.
  • In a large frying pan over medium-high heat, heat half of the oil. Cook capsicum for 5-6 mins until tender and lightly charred, then transfer to a plate. Cook onion for 3 mins until tender and lightly charred, then transfer to a plate. Wipe the pan clean with paper towel. Heat the remaining oil in the pan and cook chorizo for 2-3 mins until browned and crisp, then transfer to a plate. Reduce heat to medium and cook patties for 4-5 mins each side until cooked through.
  • Spread the bottom halves of the rolls with half of the aioli and place them on plates. Divide one-third of the salad leaves, the chorizo, and half of the capsicum and onion among the roll bases. Top each with a patty, a bit more onion, the remaining aioli, and the top halves of the rolls. Toss the remaining capsicum, onion, and salad leaves in a large bowl. Serve the burgers with the salad and fries.
