Elevate pork dinner with authentic Spanish spices.
Ingredients:
  • 23.40 gm mustard
  • 20.00 ml baby capers, rinsed, drained
  • 8 pimento-stuffed green olives, sliced
  • 20.00 ml chopped flat-leaf parsley
  • Zest and juice of 1 lemon
  • 350g piece pork fillet, trimmed
  • Cooked broad beans, to serve
Instructions:
  • Preheat the oven to 180°C. Make the sauce by combining mustard, garlic, capers, olives, parsley, zest, juice, 1 tablespoon of olive oil, pepper to taste, and 2 tablespoons of warm water.
  • In a sizzling hot ovenproof frypan, sear the pork in the remaining oil until beautifully golden, about 5 minutes, turning as needed.
  • Place the pan in the oven for 5 minutes or until the pork is fully cooked. Rest the pork for 5 minutes before slicing.
  • Drizzle the sauce over the dish and enjoy with broad beans.
