Delicious Spanish-inspired scrambled eggs with chorizo for a perfect breakfast.
Ingredients:
  • 300g dried chorizo sausages, cut into 1cm slices
  • 8 extra large eggs
  • 82.50 gm Crème Fraîche
  • 1 large tomato, deseeded and chopped
  • 2 spring onions, finely chopped
  • Small handful fresh coriander, roughly chopped
  • Sourdough bread, thickly sliced
  • Green chilli, finely sliced (optional)
Instructions:
  • In a medium frying pan over medium heat, cook chorizo for about 5 minutes until crispy and golden on both sides. Then, transfer to a paper towel-lined tray to keep warm. Meanwhile, toast the sourdough bread. Lastly, whisk together the eggs and crème fraîche until well combined, and season with salt and pepper.
  • In a large frying pan over medium heat, heat olive oil and add the egg mixture. Cook halfway for about 2 minutes, then fold in tomatoes, onion, and coriander. Remove from heat and let the residual heat finish cooking the eggs.
  • Plate the creamy scrambled eggs on top of toasted sourdough and garnish with spicy chorizo, fresh coriander leaves, and a sprinkle of optional chili for an extra kick.
