Spanish tomato bread salad

Feature juicy truss tomatoes in this vibrant chorizo salad with zesty wine vinegar dressing.
Ingredients:
  • 6 large slices (about 320g) crusty Italian bread
  • 8 truss tomatoes, quartered, seeded, pulp reserved
  • 80ml (1/3 cup) extra virgin olive oil
  • 40.00 ml red wine vinegar
  • 2 chorizo sausages, thinly sliced
  • 187.50 ml fresh continental parsley leaves
Instructions:
  • Toast the bread until it's golden and crispy. Let it cool, then tear it into rustic pieces.
  • Using a stick blender, blend the reserved pulp until smooth. Strain into a bowl, saving 60ml (1/4 cup) tomato juice. Remove seeds. Mix in the oil and vinegar with the tomato juice.
  • Fry the chorizo in a large pan over medium heat for 3 minutes per side until golden brown. Repeat with the remaining chorizo.
  • Combine the bread with the dressing until evenly coated, then mix in the tomato, chorizo, and parsley. Season with salt and pepper, toss everything together to combine.
