Sparkling peach iced-tea bellini

Make a delicious Italian peach bellini-inspired iced tea.
Ingredients:
  • 3 ripe peaches
  • 20.00 ml Cointreau (orange flavoured liqueur)
  • 2 x 350ml Luscious Peach Iced Tea, chilled
  • 750ml Champagne, chilled
Instructions:
  • Start by gently immersing two ripe peaches in a heatproof bowl and pouring boiling water to cover them. Allow the peaches to soak for 2 minutes, then carefully drain and peel off the skin. Transfer the peach flesh to a bowl, pour in Cointreau, and blend until smooth using a stick mixer. This will yield roughly 1 cup (250 ml) of luscious puree. Seal with plastic wrap and refrigerate for a refreshing chill for about 30 minutes.
  • Halve the remaining peach and remove the stone. Finely chop, slice, or crush the flesh. Add 1-2 tablespoons of chilled peach puree to serving glasses, then top with tea and champagne. Finally, add the chopped, sliced, or crushed peach flesh and serve.
