Raspberry and white chocolate gelatin with a champagne kick - a sophisticated and indulgent dessert for any occasion.
Ingredients:
  • 1 box (4-serving size) raspberry-flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 16 fresh raspberries
  • 1 cup whipping cream
  • 4 oz white chocolate baking bars or squares, finely chopped
  • 3 tablespoons sugar
  • 2 teaspoons unflavored gelatin
  • 1/2 cup milk
  • 2 cups champagne or sparkling wine
  • 1 envelope unflavored gelatin
Instructions:
  • Place raspberry gelatin in a medium bowl. Pour boiling water over gelatin and stir until dissolved. Add cold water and mix well. Cool slightly. Place 4 raspberries in each champagne glass, then fill each glass one-third full with raspberry gelatin. Refrigerate until set, approximately 1 hour.
  • In a saucepan, gently warm whipping cream, white chocolate, and 3 tablespoons sugar until chocolate is melted. Take it off the heat and let it cool. In a bowl, dissolve 2 teaspoons unflavored gelatin in milk. Combine milk mixture with the white chocolate mixture, stirring until well mixed. Pour over the raspberry layer in each glass. Chill until firm, approximately 30 minutes.
  • Heat 1 cup of champagne and 3 tablespoons sugar in a small saucepan until boiling. Remove from heat and let it cool. In a small bowl, dissolve 1 envelope of unflavored gelatin in the remaining 1 cup of champagne. Combine the gelatin mixture with the cooled champagne mixture and stir until blended. Pour this mixture over the white chocolate layer in each glass and refrigerate for 4 hours or overnight.
