Sparkling Rum Runner

Revamp the classic Rum Runner with broiled fruit, fresh juice, and sparkling water for a refreshing twist.
Ingredients:
  • 1 cup ice cubes
  • 1 small banana
  • 8 fresh blackberries
  • 0.5 cup pineapple juice
  • 0.5 cup freshly squeezed lime juice
  • 0.25 cup pomegranate juice
  • 0.25 cup Jamaican rum
  • 0.5 cup chilled club soda
Instructions:
  • Position an oven rack 3 inches below the broiler and preheat. Slice the banana into 3/4-inch pieces and place them on a baking sheet lined with foil.
  • Broil until golden brown, about 2 minutes in the preheated oven.
  • Combine broiled banana, 8 blackberries, pineapple juice, lime juice, pomegranate juice, and rum in a blender. Blend while gradually adding ice cubes through the lid opening until smooth.
  • Pour the mixture into 2 hurricane glasses or other stemmed 12-ounce glasses. Add chilled club soda on top and give it a gentle stir to mix everything together.
