Sparkling shiraz sangria

Ingredients:
  • 125ml water
  • 2 cinnamon sticks
  • 125ml brandy
  • 2 oranges
  • 2 lemons
  • 100g caster sugar
  • 375ml orange juice
  • 80ml lemon juice
  • 1 x 750ml btl sparkling shiraz, chilled
  • 500ml soda
Instructions:
  • Zest one orange and one lemon using a zester or peel with a vegetable peeler. Remove any white pith with a small, sharp knife and cut the rind into thin strips.
  • Squeeze the orange and lemon to collect their juice. Combine the juices to get 1 1/2 cups orange juice and 1/3 cup lemon juice. Slice the remaining orange and lemon thinly and set aside.
  • In a saucepan over low heat, mix together the rind, sugar, water, and cinnamon. Stir for 1 minute or until the sugar dissolves. Chill in the fridge in a jug.
  • In a large jug or serving bowl, mix together cold syrup, brandy, juices, and the reserved sliced orange and lemon. Pour in the wine and soda water, and serve promptly.
