Ingredients:
  • 250g unsalted butter, softened
  • 85g icing sugar, plus extra to dust
  • 375g plain flour
  • 4 lemons
  • 400g caster sugar
  • 4.00 gm baking powder
Instructions:
  • Prepare a 4cm-deep, 30cm x 20cm slice pan by greasing and lining the base.
  • In a food processor, combine the butter and icing sugar until smooth. Add 2 cups (300g) of flour and process until a ball forms. Press the dough into the pan, then chill for 15 minutes before moving on.
  • Heat your oven to 170°C.
  • Bake the pan in the oven for 15 minutes. Allow it to cool while you make the topping. Grate the rind from 2 lemons and juice all 4 (you will need about 90ml of juice).
  • In a large bowl, vigorously combine eggs and caster sugar. Add in the rest of the flour, baking powder, lemon zest, and juice. Gently whisk until well mixed. Pour the mixture over the cooled base and bake for an additional 30 minutes until the top is golden and fully set. Let it cool in the pan, then slice into pieces.
  • Sprinkle with a touch more icing sugar before serving.
