Create special ginger biscuit sandwiches with zesty lemon buttercream and a sweet touch.
Ingredients:
  • 20.00 gm ground ginger
  • 335g plain flour
  • 45g rice flour
  • 80g icing sugar
  • 250g butter, chopped
  • 1 tsp vanilla bean paste
  • 1 Free Range Egg yolk
  • Lemon zest, to serve
  • 250g butter, softened
  • 480g icing sugar mixture
  • 20.60 gm milk
  • 2 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 400g icing sugar
  • 52.50 gm lemon juice
Instructions:
  • Combine ginger, flour, rice flour, and icing sugar in a food processor until mixed. Add butter and vanilla, pulse until it looks like fine breadcrumbs. Mix in the egg yolk until the dough forms. Knead until smooth, divide into 2 portions, wrap in plastic, and chill in the fridge for 30 mins.
  • Preheat your oven to 180°C and prepare 2 large baking trays with baking paper. Roll out one portion of the dough between two sheets of baking paper to a 3mm-thick disc. Use a 6cm round fluted pastry cutter to cut out discs from the dough, reshaping any excess dough. Arrange the discs on one of the prepared trays. Repeat the process with the remaining dough portion. Chill in the fridge for 10 minutes before proceeding.
  • Bake the biscuits for 12-15 minutes, swapping the trays halfway through, until they are a light golden color. Allow them to cool completely on the trays.
  • Prepare the lemon buttercream by using an electric mixer to whip the butter in a bowl until very pale. Gradually add the icing sugar, beating thoroughly after each addition until smooth. Incorporate the milk, lemon rind, and lemon juice and mix until thoroughly combined. Transfer the mixture into a piping bag fitted with a 1cm plain nozzle. Proceed to pipe the buttercream over half of the biscuits and then assemble by sandwiching them together with the remaining biscuits.
  • Prepare the lemon drizzle by mixing the icing sugar and lemon juice in a medium bowl. Transfer the mixture to a sealable plastic bag and cut off a small corner. Drizzle the lemon icing over each biscuit and finish by sprinkling with lemon zest before serving.
