Speedy mackerel spaghetti

Transform broccoli stalks and stale bread into a delicious dish with crispy breadcrumbs. Upgrade to tinned mackerel for higher omega-3 and omega-6 levels. Easy, comforting meal ready in minutes.
Ingredients:
  • 1 slice of stale thick white bread (100g)
  • ½ a head of broccoli (180g)
  • 2 cloves of garlic
  • ½ a lemon
  • 150 g dried spgahetti
  • ½ teaspoon dried chilli flakes
  • 1 x 125 g tin of mackerel in tomato sauce
  • 30 g mature Cheddar cheese
Instructions:
  • Roughly chop stale bread to make rustic breadcrumbs. Heat 1 tablespoon of olive oil in a large non-stick frying pan over medium-high heat. Cook breadcrumbs for 3 minutes until crispy, stirring regularly. Transfer to a bowl. Trim tough end off broccoli stalk, cut florets into small pieces, and thinly slice remaining stalk. Peel and slice garlic. Grate lemon zest and set aside. Cook pasta in boiling salted water per package instructions, adding broccoli florets for the last 2 minutes. Drain, reserving a mug of pasta water. Wipe out frying pan and add 2 teaspoons of olive oil and dried chilli over medium heat. Cook broccoli stalk for 5 minutes until lightly charred, adding pasta water as needed. Add garlic for the last minute. Break up mackerel in pan, pour in pasta water, and simmer for 2 minutes. Add pasta, tossing with broccoli and mackerel, adding pasta water as needed. Off heat, grate cheese, squeeze lemon juice, season with salt and pepper. Plate, topping with breadcrumbs and lemon zest. Enjoy!
