Quick and flavorful dish with spiced, creamy coconut curry vibes.
Ingredients:
  • 18.20 gm peanut oil
  • 600g beef rump steak, cut into thin strips
  • 1 red capsicum, cut into thin strips
  • 1 large red onion, halved, cut into thick wedges
  • 100g (1/3 cup) Thai Massaman Curry Paste
  • 125ml (1/2 cup) coconut milk
  • 40g baby spinach leaves
  • Shredded coconut, toasted, to serve
  • Steamed rice, to serve
Instructions:
  • In a sizzling wok, sear half of the beef in hot oil until golden. Transfer to a bowl and repeat with the rest of the beef.
  • Drizzle in the remaining oil. Stir-fry the capsicum and onion for 3 minutes, or until the onion slightly softens. Transfer everything to the bowl.
  • Cook the curry paste in a hot pan for 30 seconds until fragrant. Add coconut milk and cook for 2 minutes until slightly thickened. Add the beef and spinach and stir-fry for 1 minute until spinach wilts. Top with shredded coconut and serve with steamed rice.
