Elevate dinner with quick meatball fried rice garnished with spring onion and toasted cashews.
Ingredients:
  • 18.20 gm olive oil
  • 500g pkt Pork & Beef Meatballs
  • 450g pkt microwavable jasmine rice
  • 1 brown onion, cut into wedges
  • 1 red capsicum, cut into strips
  • 500.00 ml Chinese cabbage (wombok), chopped
  • 80ml oyster sauce
  • 2 spring onions, sliced
  • 40g cashew
Instructions:
  • In a large frying pan over medium heat, heat the oil until shimmering. Add the meatballs and cook for 5-7 mins, turning occasionally, until golden brown and cooked through. Remove to a plate.
  • While the flavors develop, prepare the rice following the instructions on the packet.
  • Sauté the brown onion and capsicum together in a large frying pan until starting to brown. Stir in the rice and cook until well combined, then add the cabbage and oyster sauce. Cook until the cabbage is just tender. Finally, return the meatballs to the pan and heat through for 1 minute.
  • Garnish the fried rice with fresh spring onions and crunchy cashews before serving.
