Easy shortcut spanakopita with puff pastry, 3 cheeses, and fresh dill, green onions, and spinach for a delicious twist!
Ingredients:
  • cooking spray
  • 1 bunch fresh spinach
  • 3 green onions, diced
  • 0.25 cup chopped fresh dill
  • 1 teaspoon minced garlic
  • salt and ground black pepper to taste
  • 5 ounces shredded mozzarella cheese
  • 1 (4 ounce) package grated Parmesan cheese
  • 1 (4 ounce) package crumbled feta cheese
  • 1 egg, lightly beaten
  • 2 sheets frozen puff pastry, thawed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a large baking sheet with cooking spray.
  • Preheat a large pan over medium-high heat and spray with cooking spray. Cook spinach, green onions, dill, garlic, salt, and pepper until spinach wilts and releases liquid, about 3-5 minutes.
  • Mix together the mozzarella, Parmesan, and feta cheeses in a large bowl. Stir in the egg and spinach mixture until well combined.
  • Place a puff pastry sheet on the baking sheet. Moisten the edges by tracing a wet fingertip around them. Spread the spinach and cheese mixture in the center, leaving a 1/2-inch border. Top with the second pastry sheet, seal the edges by pressing down, make two steam vents with a knife, and finish by spraying the top with cooking spray.
  • Bake in the preheated oven for 15 to 20 minutes until beautifully golden. Allow to cool for 5 minutes, then effortlessly slice into sections using a pizza cutter.
