Spelt blini with ginger-spiced cherries and goat's cheese

Impress your guests with easy-to-make savoury blinis topped with spiced cherries and creamy goat's cheese. Perfect for a crowd!
Ingredients:
  • 150g (1 cup) plain flour
  • 75g (1/2 cup) spelt flour
  • 1 tsp instant yeast
  • Pinch of salt
  • 1 egg, separated
  • 310ml (1 1/4 cups) milk, warmed
  • 20.00 gm butter, melted, plus extra, to grease
  • Soft goat's cheese, to serve
  • Baby herbs, to serve
  • 320g (2 cups) cherries, halved, pitted
  • 45g (1/4 cup) brown sugar, lightly packed
  • 20.00 ml balsamic vinegar
  • 1.25 gm ground cinnamon
  • 1.25 gm ground ginger
  • Pinch of allspice
Instructions:
  • Combine flours, yeast, and salt in a bowl, then create a well in the center. Add yolk, milk, and butter, whisk until mixture is combined. Cover with plastic wrap and let it sit for 45-60 minutes until bubbles form on the surface. Lightly whisk egg white and gently fold it into the batter.
  • For the ginger-spiced cherries, combine all the ingredients in a small saucepan over gentle heat. Stir for 2 minutes until the sugar dissolves. Cover and let it simmer for 5 minutes. Uncover and continue to simmer for 30 minutes until the mixture thickens. Allow it to cool before using.
  • 1. Grease a non-stick frying pan with extra butter and heat over medium heat. 2. Spoon 2 tsp of the batter into the pan to make six blinis. 3. Cook for 1-2 minutes until bubbles form on the surface. 4. Flip and cook for an additional 2 minutes until done. 5. Transfer to a plate and repeat with remaining batter, using butter as needed.
  • Garnish the blini with the ginger-spiced cherries, goat's cheese, and baby herbs before serving.
