Spelt Pizza Dough

Make Chef John's spelt pizza dough for a protein-rich, nutty twist on traditional pizza crust.
Ingredients:
  • 3 cups sprouted spelt flour, or as needed, divided
  • 1 cup warm water (100 to 105 degrees F/38 to 41 degrees C)
  • 2 teaspoons honey
  • 1 (.25 ounce) package active dry yeast
  • 1 tablespoon extra-virgin olive oil, plus more for drizzling
  • 1 teaspoon kosher salt
Instructions:
  • Combine 1 cup of flour, water, honey, and yeast in a bowl and whisk until the mixture is bubbly and the yeast has softened, approximately 20 minutes.
  • Combine the 2 cups of remaining flour with olive oil and salt into the yeast mixture. Use a stand mixer with a dough hook to beat the mixture, gradually adding more flour until a soft and tacky dough forms in about 3 to 4 minutes. Transfer the dough to an oiled mixing bowl, cover it with a plate, and allow it to rise until doubled in volume, approximately 90 minutes.
  • Gently deflate dough and place on lightly floured surface. Divide into four equal balls, cover, and allow to rise for 30 to 45 minutes.
