Spiced honey yogurt beef tortilla bake: Quick, inexpensive, and sure to be a family favorite.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 500g beef mince
  • 5.00 gm ground cumin
  • 400g can chopped tomatoes
  • 500g butternut pumpkin, peeled, cut into 2cm pieces
  • 250.00 ml plain Greek-style yoghurt
  • 200g feta, crumbled
  • 6 flour tortillas, halved
  • 125.00 ml flaked almonds
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced and generously grease a 5cm-deep, 20cm square ovenproof dish.
  • In a large frying pan over medium heat, heat oil and sauté onion, garlic, and ginger until onion softens, about 5 minutes. Add mince and brown for 6 to 8 minutes, breaking it up with a wooden spoon. Stir in cumin, cinnamon, and honey and cook for an additional minute.
  • Combine tomatoes and pumpkin in the pot. Season generously with salt and pepper. Stir well. Cover and simmer for 10 minutes, or until the pumpkin is nearly tender.
  • In a bowl, mix together yogurt, feta cheese, and egg.
  • Layer 3 tortilla halves in the prepared dish. Spread 1/3 of the mince mixture over them. Add 3 more tortilla halves on top and spread with half of the remaining mince mixture. Repeat the layering, ending with a layer of tortilla halves. Top with dollops of the yogurt mixture, ensuring an even coverage. Sprinkle with almonds, then cover with baking paper and foil before baking.
  • Bake uncovered for an additional 10-15 minutes until golden. Allow to stand for 5 minutes before serving with fresh coriander.
