Spiced cauliflower soup with yoghurt

Try this flavorful and healthy spiced cauliflower soup for a quick and tasty meal.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, chopped
  • 1 desiree potato, peeled, chopped
  • 2 garlic cloves, chopped
  • 1/2 tsp ground turmeric
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 1/4 tsp ground chilli
  • 1/2 medium cauliflower (see note), trimmed, cut into small florets
  • 1402.50 gm vegetable liquid stock
  • 125.00 ml low-fat natural yoghurt
  • naan bread, warmed, to serve
Instructions:
  • In a large saucepan over medium-high heat, sauté onion, potato, and garlic in hot oil until onion is soft, about 5 minutes. Stir occasionally.
  • Sprinkle in turmeric, coriander, cumin, and chili. Sauté for 1 minute until fragrant. Introduce cauliflower and stock, cover, and bring to a boil. Lower the heat to medium-low. Let it simmer uncovered for 15 to 20 minutes until the cauliflower is soft. Allow it to cool a bit before serving.
  • Puree soup in batches for a velvety texture. Transfer back to saucepan over gentle heat. Swirl in 1/3 cup yoghurt. Simmer for 3 to 4 minutes until steaming (avoid boiling). Season with salt and pepper to taste.
  • Pour the soup into bowls. Drizzle each serving with 1 teaspoon of the remaining yogurt. Enjoy with naan bread.
