Spiced chicken skewers with tzatziki

Delicious chicken skewers with creamy tzatziki - ideal for hosting a party!
Ingredients:
  • 800g chicken thigh fillets, cut into 3cm pieces
  • 2 tsp coriander seeds, crushed
  • 1 tsp cumin seeds, crushed
  • 3.00 gm sesame seeds
  • 2.50 gm sweet paprika
  • 2.00 garlic clove, crushed
  • 2 Lebanese cucumbers
  • 250.00 ml plain Greek-style yoghurt
  • 125.00 ml finely shredded fresh mint leaves, plus extra leaves to serve
Instructions:
  • In a large bowl, mix together chicken, oil, coriander, cumin, sesame seeds, paprika, and garlic. Season with salt and pepper, then thread the chicken onto skewers.
  • Coarsely grate the cucumbers, squeeze out excess moisture, and transfer to a bowl. Mix in the garlic, yogurt, and mint, combining well. Season with salt and pepper to taste.
  • Preheat a large frying pan or chargrill pan over medium-high heat. Add the chicken skewers and cook for 6 to 8 minutes, turning occasionally, until browned and fully cooked.
  • Garnish skewers with tzatziki sauce and fresh mint leaves before serving.
