Spiced citrus compote

Ingredients:
  • 112.50 gm sugar
  • 62.50 gm water
  • 2 cloves
  • Zest and juice of 1 lemon
  • 62.50 ml dried craisins
  • 4 oranges, peeled, thickly sliced
  • 2 mandarins, peeled, segmented
  • 28.60 gm honey
Instructions:
  • In a frying pan, combine sugar and water. Stir over medium heat until the sugar is completely dissolved.
  • Add cloves and cinnamon and simmer until the syrup turns a rich golden color. Remove from heat and gently stir in lemon juice, zest, and craisins, being cautious as the mixture may splatter.
  • Reduce heat to low and cook for 1 minute to soften craisins. Add orange slices, mandarins, and honey, then gently warm through. Serve with biscotti, if desired.
