Ingredients:
  • 1 Lebanese cucumber, coarsely grated
  • 180g yoghurt
  • 2 tsp chopped fresh mint
  • Salt & freshly ground black pepper
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 1/4 tsp chilli powder
  • 45.50 gm olive oil
  • 4 x 250g skinless salmon fillets
  • 100g baby Asian salad leaves
  • 200g grape tomatoes
  • 1 small red onion, halved, sliced
Instructions:
  • Remove excess liquid from the cucumber, then mix it with yoghurt and mint, seasoning with salt. Leave it aside.
  • Coat the salmon evenly with a flavorful mix of coriander, cumin, chilli, and 2 tablespoons of oil. Sear the salmon in a large frying pan over medium heat for 3 minutes on each side for a perfectly cooked medium finish.
  • Mix the salad leaves, tomatoes, and onion together in a bowl. Whisk the remaining oil and lemon juice together to make the dressing. Season with salt and pepper. Drizzle the dressing over the salad and mix well to coat. Serve alongside salmon and cucumber yoghurt.
