Easy and quick nutty spiced slice filled with festive aromas as it bakes.
Ingredients:
  • 100 g unsalted butter plus extra for greasing
  • 120 g chestnuts
  • 75 g shelled pistachios
  • 1 1/2 oranges
  • 9 cardamom pods
  • 1 tablespoon caraway seeds
  • 100 ml golden syrup
  • 150 g light soft brown sugar
  • 225 g oats
Instructions:
  • Preheat the oven to 180ºC/gas 4, then grease and line a 25cm x 30cm roasting tray with non-stick paper. Roughly chop chestnuts and pistachios, grate orange zest finely, and remove seeds from cardamom pods. Grind cardamom seeds and caraway seeds in a mortar. In a pan, heat golden syrup, sugar, and butter until sugar dissolves and butter melts. Combine all remaining ingredients in a bowl, mix in the wet mixture, then pour into the tin. Bake for 25 to 30 minutes until golden. Let cool for 5 minutes, cut into squares, and cool completely in the tin.
