Bake sweet and tangy honey mustard cottage ham with purple cabbage for a comforting and flavorful dish.
Ingredients:
  • 3 pounds cottage ham
  • 4 cups apple cider
  • 2 yellow onions, quartered
  • 6 fresh thyme sprigs
  • 4 cloves garlic
  • 2 dried bay leaves
  • 2 cinnamon sticks
  • 1 tablespoon whole black peppercorns
  • 2 teaspoons whole cloves
  • water to cover
  • 1 (3 pound) purple cabbage
  • 1 teaspoon ground black pepper
  • 0.33 cup honey mustard
  • 0.25 cup stone-ground mustard
  • 0.25 cup dark brown sugar
Instructions:
  • In a large Dutch oven, combine cottage ham, cider, onions, thyme, garlic, bay leaves, cinnamon sticks, peppercorns, cloves, and enough water to cover the ham. Bring to a boil over high heat for about 10 minutes. Reduce heat, cover, and simmer gently for 1 hour and 30 minutes.
  • Simmer the ham, then preheat the oven to 350°F (175°C). Quarter and slice the cabbage, removing the core. Toss the cabbage slices in a bowl with olive oil, salt, and pepper.
  • Combine honey mustard, stone-ground mustard, and brown sugar in a bowl. After simmering the cottage ham, move it to a roasting pan and brush the honey mustard mixture over the ham.
  • Bake until glaze is melted and thermometer reads 145°F (63°C), 20-30 minutes in preheated oven.
  • Once the ham is baking, save 1 1/2 cups of the cooking liquid in a Dutch oven. Remove any solids and excess liquid. Heat the Dutch oven over medium-high heat, then add sliced cabbage and mix well. Cover and cook until the cabbage is tender, which should take about 15 minutes. Transfer the cooked cabbage onto a platter.
  • After baking, allow the cottage ham to rest for 10 minutes before slicing and serving it on a bed of cabbage.
