Introduce kids to kohlrabi with delicious golden fritters.
Ingredients:
  • 1/4 tsp cumin seeds
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground turmeric
  • 2 (about 400g) kohlrabi, peeled, coarsely grated
  • 1 large carrot, peeled, coarsely grated
  • 1 brown onion, coarsely grated
  • 125.00 ml coarsely chopped coriander
  • 75g (1/2 cup) plain flour
  • 20.60 gm milk
  • 40.00 ml ghee or vegetable oil
  • 250g (1 cup) Greek Style Yoghurt
  • 24.00 gm tahini (sesame paste)
  • Coriander leaves, to serve
Instructions:
  • Toast cumin seeds in a small frying pan over low heat until aromatic, about 1 minute. Transfer to a bowl. Mix in cardamom and turmeric. Combine kohlrabi, carrot, onion, coriander, egg, flour, and milk. Season generously with salt and pepper.
  • 1. Heat ghee in a large frying pan on medium heat. Drop three 1/4-cup portions of mixture on the edge of the pan. Flatten with a spatula into 8cm discs. Cook until golden, about 2 minutes. Flip and cook for another minute until done. Transfer to a plate. Repeat in three more batches with the rest of the fritters.
  • In a small bowl, mix together the yoghurt, tahini, and lemon juice. Season with salt and pepper to taste.
  • Plate the fritters, then generously spoon over creamy yogurt. Serve promptly with a side of fresh lemon wedges and a sprinkle of fragrant coriander, if preferred.
