Spiced madeleines with warm chocolate sauce

Spiced madeleines with warm chocolate sauce, inspired by Aria restaurant in Sydney.
Ingredients:
  • 185g unsalted butter
  • 2 eggs
  • 161.25 gm caster sugar
  • 150g plain flour
  • 20.00 ml rum
  • 2.50 gm mixed spice
  • Icing sugar, to dust
  • 200ml pure (thin) cream
  • 50ml milk
  • 200g dark chocolate, chopped
  • 20g good-quality cocoa powder
Instructions:
  • Create decadent chocolate sauce: Simmer cream and milk in a saucepan until almost boiling, then stir in chocolate and cocoa until silky. Let cool and store any leftovers in the fridge for 5 days.
  • Preheat your oven to 200C and prepare your mini madeleine pan by greasing and flouring it. If you have a 24-hole pan, great; if not, use a 12-hole pan and bake in two batches.
  • Melt butter in a pan over medium heat, then let it sit for 2 minutes. Strain clear liquid into a jug, discarding sediment.
  • Use electric beaters to whip the eggs and sugar until they are thick and pale. Gently fold in the flour and clarified butter. Mix in the rum and spice until well combined.
  • Evenly distribute 2 teaspoons of mixture in each mold. Bake for 6 minutes or until golden. Allow to cool on a rack, then sprinkle with icing sugar. Enjoy with a side of warm chocolate sauce for dipping.
