Must-have mussels pilaf for cozy dinners or festive gatherings.
Ingredients:
  • 120g pea
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp ground turmeric
  • 2 cinnamon quills, lightly bruised
  • 400g basmati rice
  • 500ml chicken stock
  • 1kg mussels, scrubbed, debearded
  • 40.00 ml chopped coriander leaves
Instructions:
  • In a large saucepan over medium heat, heat olive oil and add onion, chopped garlic, ground turmeric, and cinnamon quills. Season with sea salt and freshly ground black pepper. Sauté for 5 minutes until onion is softened, stirring occasionally.
  • Combine rice with onion mixture, stirring for 1 minute. Pour in chicken stock and bring to a boil. Cover and simmer for 10 minutes. Add mussels and frozen peas, stirring to combine. Cover and continue cooking for another 10 minutes until rice is tender and mussel shells have opened (discard any closed shells).
  • Take the saucepan off the heat and let it sit covered for 5 minutes. Add the chopped coriander leaves, then spoon the pilaf into bowls and enjoy.
