Sensational spiced pork patties with tahini sauce, flatbread, and zesty lemon wedges - a new family favorite!
Ingredients:
  • 332.50 ml flat-leaf parsley leaves
  • 250.00 ml coriander leaves
  • 500g Pork Mince
  • 35g breadcrumbs
  • 1 Free Range Egg
  • 5.00 gm sweet paprika
  • 2 tsp Middle Eastern Harissa spice mix
  • 3 garlic cloves, crushed
  • 180g tahini
  • 42.00 gm lemon juice
  • 2 ripe tomatoes, finely chopped
  • 1/2 red onion, thinly sliced
  • Mountain Bread flatbread, to serve
  • Lemon wedges, to serve
Instructions:
  • Chop the parsley and coriander, then combine in a large bowl with the mince, breadcrumbs, egg, paprika, spice mix, two-thirds of the garlic, and seasonings. Mix until fully combined. Shape tablespoon portions of the mixture into balls, flatten slightly, then chill in the fridge for 10 minutes on a tray lined with baking paper.
  • In a bowl, mix together tahini, lemon juice, remaining garlic, and 1/2 cup (125ml) warm water. In a separate large bowl, toss together the tomato, onion, remaining parsley, and remaining coriander.
  • In a spacious non-stick frying pan, heat oil over medium-high heat. Cook patties for 3 minutes on each side or until fully cooked. Serve alongside salad, tahini sauce, flatbread, and lemon wedges.
