Spooky cupcakes with spiced cake, cream cheese frosting, black gel webs, and gumdrop spiders.
Ingredients:
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 2 cups water
  • 0.66666668653488 cup canola oil
  • 2 tablespoons distilled white vinegar
  • 2 teaspoons vanilla extract
  • 2 (3 ounce) packages cream cheese, softened
  • 0.5 cup butter, softened
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground cinnamon
  • 5 cups sifted confectioners' sugar, or more as needed
  • 1 (.68 oz. tube) black decorating gel
  • 24 large spiced gumdrops
  • black shoestring licorice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare cupcake pans with paper liners.
  • In a bowl, whisk together flour, white sugar, baking soda, 1 teaspoon salt, 1 teaspoon cinnamon, cloves, and nutmeg. In a separate bowl, mix water, canola oil, vinegar, and 2 teaspoons vanilla extract. Pour the liquid mixture into the dry ingredients and stir until smooth to create a thin batter.
  • Pour the batter from the measuring cup or pitcher into the prepared cupcake pans.
  • Bake in a preheated oven for about 25 minutes until the tops spring back when gently pressed with a fingertip and a toothpick inserted in the center comes out clean. Then, cool the cupcakes completely on a wire rack.
  • Using an electric mixer, blend cream cheese, butter, 2 teaspoons vanilla extract, 1/4 teaspoon salt, and 1/8 teaspoon cinnamon until smooth. Slowly add confectioners' sugar until frosting is creamy. Spread on cooled cupcakes.
  • Using black decorating gel, create a series of concentric circles on each cupcake starting from the center and getting larger towards the edge to form about 5 rings. Then, use a toothpick to draw roughly 8 spokes from the center to the edge to make a web-like design.
  • Cut licorice strings into 1 1/4-inch pieces for legs. Insert four licorice legs on each side of a gumdrop. Use decorating gel to create eyes and a smiley mouth on each gumdrop. Place a gumdrop spider on top of each cupcake at the center of the webs.
