Indulgent spiced yogurt is the perfect cool finale to your lavish Indian meal.
Ingredients:
  • Pinch of saffron threads
  • 780g (3 cups) Greek-style natural yoghurt
  • 70g (1/3 cup) caster sugar
  • 1/4 tsp ground cardamom
  • 0.63 gm ground cinnamon
  • 1/4 tsp rosewater essence (see note)
  • 18.40 gm vegetable oil
  • 35g (1/3 cup) flaked almonds
  • 65g (1/3 cup) sultanas
  • 60ml (1/4 cup) honey
Instructions:
  • Heat the milk in a small saucepan over medium heat until it just starts to boil. Stir in the saffron and let it sit for 10 minutes to infuse.
  • Prepare a sieve lined with clean muslin over a large bowl. Plop the yogurt into the sieve, tie the muslin edges together, cover with a plate, and gently press to remove liquid. Chill in the fridge for 30 minutes to allow draining.
  • Pour the yogurt into a large bowl, then add the sugar, cardamom, cinnamon, and rosewater essence if using. Whisk everything together until combined, then whisk in the saffron mixture.
  • In a heated frying pan with oil over medium heat, toss the almonds and sultanas for 2 minutes until almonds are golden and sultanas are plump. Move the mixture to a small bowl and let it cool.
  • Spoon the yogurt mixture into serving glasses or bowls. Sprinkle the almond mixture on top and finish with a drizzle of honey before serving.
