Spicy vegan Asian ramen noodles - ready in 15 minutes for ultimate comfort.
Ingredients:
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1.5 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons chili-garlic sauce, or more to taste
  • 1 teaspoon grated fresh ginger
  • 3 tablespoons creamy peanut butter
  • 2 (3 ounce) packages ramen noodles
  • 2 tablespoons chopped peanuts
  • 2 medium green onions, thinly sliced diagonally
Instructions:
  • Combine soy sauce, sesame oil, brown sugar, rice vinegar, chili garlic sauce, and ginger in a bowl. Mix in peanut butter until smooth and well incorporated. Set aside.
  • 1. Bring 4 cups of water to a boil. Remove flavor packet from ramen noodles. Drop noodles into the boiling water and cook until tender, about 4 to 5 minutes. Drain noodles, saving some cooking water for sauce adjustments if needed.
  • Coat ramen noodles with sauce by pouring it over them and tossing thoroughly. If the sauce is too thick, add some reserved noodle water gradually until it reaches your preferred thickness. The hot noodles will absorb the flavorful sauce. Top with peanuts and green onion before serving.
