Flavorful English muffins with balanced nutrition. Elevate with a gooey poached egg for extra indulgence.
Ingredients:
  • 2 small firm ripe avocados, stone removed, peeled
  • 1/4 tsp dried red chilli flakes
  • 10.60 gm lemon juice
  • 4 whole grain English muffins, halved
  • 50g baby spinach leaves
  • 100g sliced smoked salmon
  • Lemon wedges, to serve
Instructions:
  • In a medium bowl, combine avocado flesh with chili flakes and lemon juice. Mash with a fork until roughly smooth, then season with sea salt and freshly ground black pepper to taste.
  • Toast the muffins until golden brown. Spread mashed avocado on top, then evenly divide the smoked salmon and spinach leaves among half of the muffins. Serve with the other muffin halves and a wedge of lemon. Optional: top with a poached or fried egg for extra deliciousness.
