Spicy buttermilk-coated chicken breasts baked to perfection - picnic-ready perfection!
Ingredients:
  • 1 cup buttermilk
  • 1 (1.25 ounce) package taco seasoning mix, divided
  • 0.125 teaspoon cayenne pepper
  • 1 cup bread crumbs
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly spray a broiler pan with cooking spray.
  • Combine the buttermilk, 1 teaspoon of taco seasoning, and a dash of cayenne pepper in a bowl, whisk until well blended.
  • Combine the rest of the taco seasoning with bread crumbs, Parmesan cheese, flour, onion powder, salt, and black pepper in a separate bowl.
  • First, soak the chicken in the luscious buttermilk blend, then generously coat it with the delectable bread crumb mix before carefully arranging it in the broiler pan.
  • Cook the chicken in the preheated oven until it's no longer pink in the center and the coating is crispy, usually about 30 to 35 minutes. Ensure it reaches an internal temperature of at least 165 degrees F (74 degrees C) by using an instant-read thermometer.
